Pina colada cocktails are one of my favourites. So I decided to take the adventure further by trying out pina colada cake.
This delicious cake, filled with rich flavor, can be so much fun when paired with the right drink.

Ingredients
You’ll need these for the cake:
- 2 cups home baking flour
- 1/2 cup shredded coconut
- 1/2 cup diced pineapple pieces
- 1/3 cup vegetable oil/margarine
- 2 large eggs
- 1 teaspoon baking powder
- 1 cup crushed pineapple, drained
How to Make Pina Colada Cake
You’ll first need to prep your oven. Preheat it for 15 to 20 minutes at 350°F.
- In a medium bowl mix the dry ingredients (flour, baking powder, shredded coconut, and sugar)
- Mix the wet ingredients (eggs, crushed pineapple, and melted margarine)
- Combine the wet and dry ingredients, including the diced pineapple pieces, and mix until everything is well blended
- Grease your baking pan and then pour the batter into the pan
- Bake for 40-50 minutes at 350°F
- Taste doneness. You can do this by inserting a toothpick in the center of the cake. You should know the cake is done if the toothpick comes out clean or with just few crumbs attached.
- Let the cakes cool in the pan for 10 minutes, then transfer to wire racks to cool completely.

- Serve the tropical treat with your favorite drink
