These zesty treats hold a special place in my heart, not just because of their delightful flavor but because they carry the essence of a cozy morning ritual. As fresh citrus aroma fills the kitchen as the batter sizzles on the pan – there’s always something good to look up to.

Ingredients

You’ll need the following ingredients:

  • 1/2 cups self-rising flour
  • 2 tablespoons granulated sugar
  • 1 cup milk (150 ml)
  • 2 large eggs
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons unsalted butter, melted/vegetable oil

  4.  Heat the Griddle: Preheat your griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  5.  Cook the Pancakes: Pour 1/4 cup of batter onto the preheated griddle for each pancake. Cook until bubbles form on the surface and the edges begin to set, then flip and cook until golden brown on the other side. Repeat with the remaining batter.
  6.  Serve: Stack the pancakes on a plate and serve warm, garnished with your favourite toppings.
