It’s time I share this recipe. I’ve seen different people preparing it in unique ways, and let me say, each to their own preference. But who said you can’t have them a little more delicious than the usual?

So today I was wondering what to prepare for dinner, and unlike everyday, I couldn’t think beyond the grocery I have in my kitchen. Yes, you heard me right. Sometimes we just want to spend nothing at all when it comes to food. And what’s a better way to prepare a mildly spicy, comforting, and inexpensive dish?

So here, I am writing down this recipe, just in case you’re looking for a better way to prepare your mung beans.

Ingredients

  • 1 cup green grams (whole mung beans), soaked overnight (200g)
  • 2 tablespoons cooking oil (olive oil, vegetable oil, or any oil of your choice)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced or garlic powder
  • 2 tomatoes, chopped/blended
  • 2 tablespoons shredded coconut
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala (optional)
  • 1 teaspoon paprika (optional)
  • Salt to taste
  • 1/2 cup water or vegetable broth
  • Fresh cilantro leaves for garnish (optional)

Prep Time: 10 minutes

Cook Time: 10 Minutes

Soak Time: 2-8 hours

Boil: 1 hour


Instructions

  1. Soak Green grams/mung beans for 2 hours or overnight it possible.
  2. Rinse the soaked green grams under cold water and drain them.
  3. Boil for an hour or so until its soft. Pay attention not to overcook.
  4. Heat the cooking oil in a standard pan over medium heat.
  5. Add turmeric and garlic and let them sizzle for a few seconds until fragrant.
  6. Add the chopped onions to the pan and sauté until they turn golden brown, about 3-5 minutes.
  7. Add the chopped/blended tomatoes to the pan and cook until they soften and release their juices, about 5 minutes.
  8. Once the tomatoes are softened, add the coriander powder, garam masala, paprika (if using), shredded coconut, and salt to taste. Stir well to combine all the spices with the onion-tomato mixture.
  9. Add the boiled green grams to the pot and mix well with the spice mixture.
  10. Pour in the water or vegetable broth. If using a regular pot/pan cover with a lid and simmer or until the green grams are fully cooked.
  11. Once the green grams are cooked, adjust the seasoning if needed and garnish with fresh cilantro leaves.
  12. Serve hot with rice or bread of your choice.
