Known for their versatility, arrowroots are one of the few starchy vegetables with high protein and extra minerals. They can complement both savoury and sweet dishes and are loved for their potential to improve digestion, making them perfect for both young children and older people. You can take the famous delicacy with masala tea or coffee or even as a main meal with a side dish.

When I first ate them, they were only boiled (a typical way of cooking them, especially in my homeland). However, after years of interacting with arrowroots cooked in unique ways, I became interested in trying different recipes. One of the few ways I love to prepare the delicacy is to wet fry them. This is the best method to cook arrowroots, especially when you don’t like them with soup or plain.

Ingredients

  • 3-4 large arrowroots (Nduma)
  • 4 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 tomatoes, chopped/blended
  • 1 teaspoon garlic powder/ 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon corriander powder
  • I teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish (optional)
  • Note: You can use any spices you love

Prep Time: 10 minutes

Cook Time: 25 minutes

Serving: 3

Instructions

  1. Peel the arrowroots and cut them into thin slices or cubes. Rinse them under cold water to remove excess starch. Let them dry before frying.
  2. Heat the vegetable oil in a pan over medium heat. Add the arrowroots and shallow fry for 5 minutes.
  3. Stir in the turmeric, garlic, and onion powder, and continue frying for another 3 minutes.
  4. Add onion and fry again for 3-5 minutes until they turn golden brown. Keep turning to prevent burning.
  5. Add the chopped/blended tomatoes, paprika, salt, and chilly powder to the pan and mix well. Cover and cook for 5-10 minutes, stirring occasionally, until the arrowroots are slightly tender.
  6. You can then add 1/2 cup of water to create a sauce-like consistency. Cover and cook for 5 more minutes until the arrowroots are tender enough to eat.
  7. Remove the pan from the heat once the arrowroots are cooked and the flavors have melded together.
  8. Garnish the arrowroot with fresh coriander leaves or basil if desired, and serve hot as a side dish or as a main course with rice or chapati.

  1. Fresh Salad: Serve the arrowroot wet fry with a side of fresh mixed greens, sliced cucumbers, tomatoes, and onions tossed with a light vinaigrette dressing.
  2. Steamed Vegetables: Steam a medley of vegetables such as broccoli, carrots, and green beans to serve alongside the arrowroot wet fry for a nutritious and balanced meal.
  3. Meat Stew: any kind of meat stew, including beef, chicken, lamb, pork, or mutton is a fantastic accompaniment to arrowroot wet fry.
  4. Chapati or Roti: Enjoy the arrowroot wet fry with freshly made chapati or roti for a satisfying and filling meal.
  5. Rice: Serve the arrowroot wet fry with steamed rice, either plain or flavored with spices such as cumin or cardamom, for a comforting and hearty dish.
  6. Yogurt Raita: Prepare a cool and refreshing yogurt raita by mixing yogurt with grated cucumber, chopped mint, and a pinch of salt. Serve it on the side to balance the flavors of the arrowroot wet fry.
